Marinated grilled Pork Chunks and onions
Recipe:
In large pot pour one 2 pound bag of black beans. Do not
use the canned stuff! Pour enough water into pot to completely cover beans.
Add more water, about three fingers above top of beans. Let soak overnight.
Take a 5 pound, or larger, pork shoulder, trim all the
fat, take meat and cut into 2 inch chunks. Put pork chunks into bowl, add Cuban
BBQ sauce (Mojo), and one small sliced onion, salt and pepper. Let marinate
overnight.
Turn heat to medium and place the pot of beans on it.
cook for 1 1/2 hours or until beans become soft. Stir frequently.
Chop up fine 1 whole onion, 1 large green peeper, and
about two tablespoons of chopped garlic. In small sauce pan pour some olive
oil and saut�’ the onion, green pepper, and garlic then pour and mix into
black beans.
After beans have been cooking for over 1 hour pour in
and stir 4 cups of rice. Stir frequently. Once rice becomes cooked put fire to
low.
Fry 8 bacon strips and drain.
Pour rice into large aluminum foil pan, put bacon strips
along the top, cover with aluminum foil. Now pack it into the car, along with
the marinated pork chunks and head to the stadium.
Now all that is left to do is fire up the grill, put the
aluminum foil pan on the grill to heat your rice, crack open a cold one, and
start grilling your pork until cooked.
